Tasty banana bread with cranberries and a nut mix🍌

I had some overripe bananas left and then I thought let's make a healthy banana bread. Banana bread is so easy to make and is super tasty. It is delicious with coffee, but can also be enjoyed with breakfast.


This banana bread is a 'healthy version' with cranberries and a nut mix. The best way to make banana bread is to use overripe bananas (close to brown). To be completely honest, I am not a fan of nuts. But this banana bread is my boyfriend's favorite. He wanted to make a healthy version and he chose for adding cranberries, a nut mix and cashew nuts.

Ingredients Cranberry Banana Bread

  • 150 grams (2/3 cup) of butter (at room temperature)

  • 190 grams (1 1/2 cup) of flour

  • 3 mashed bananas (+ 1 banana for on top of the banana bread) 🍌

  • 2 eggs 🥚

  • 1 tsp baking soda

  • 80 grams (1/2 cup) of sugar

  • 30 grams (1/4 cup) of cashew nuts

  • 60 grams (1/2 cup) of dried cranberries

  • 1 tbsp cinnamon

  • 50 gram (1/2 cup) mix of seeds (sunflower, pumpkin and pine nuts)

How do you make the banana bread 🍌?

  1. Preheat the oven to 180 ℃ (356 °F) . Grease the cake tin and place a piece of parchment paper in the cake tin.

  2. Put 150 grams of butter (at room temperature) and 80 grams of sugar together in a bowl and mix until creamy. If the butter is not at room temperature, you can also heat it for a while, so that no lumps form in the mix.

  3. Add the 2 eggs one by one and mix it together briefly. Sift the flour into the mixture. Also add the cinnamon and baking soda to the mixture and mix it briefly.

  4. Mash the 3 bananas with a fork in a bowl or put them in a blender. Add the bananas to the mixture and mix until smooth.

  5. Crunch the cashews into small pieces. Add the cashews, nut mix and cranberries to the mixture and stir into the mixture.

  6. Spoon the mixture into the cake tin and place it in the preheated oven. Wait about 45 minutes for the banana bread to be ready. Just like with a cake, you can check whether the banana bread is done by poking in it with a wooden skewer. If nothing sticks to it, it is ready.

Make sure the banana bread has cooled down before you cut it, then it will be a lot easier.


Storing banana bread

Storage tip: a covered banana bread can be kept in the refrigerator for 4 to 5 days. You can also freeze a banana bread, then it can be kept for 3 months.
